Harvest Notes

This 2023 Smoky Mountain Wildflower Honey has a "light amber" color with a Pfund scale of 79-81. It is an intense, polyfloral wildflower honey with light, mineral rich notes and tremendous reach. All this as a result of the bees blending tulip poplar and hundreds of other varietal spring nectars. The spicy finish is no doubt due to the chestnut trees hidden deep within the Pisgah forest. This honey will stand up to any food pairing, or just as well all by itself.

With a Pfund scale of 79 mm this is a beautiful, semi-dark "light amber" nectar presenting with a mango/burnt-orange color. Phenomenally low moisture levels between 12.5% to 15.4% create an intense, smoky flavor with a velvety smooth texture.
