Coloring outside the lines again, the Hive Girls blended both spring and summer nectars to make a wonderful fusion of wildflower and sourwood honey. We don’t harvest honey until the bees cap every cell to the honey frame. Therefore this blend is a mix of every possible flowering source the bees collected through-out the year from the Pisgah Forest. Every imaginable plant; from clover, dandelions, wild blueberry and huckleberry shrubs up to majestic tulip poplars and sourwood trees contributed to this honey.
We never purchase honey from other beekeepers. We control and manage the process of honey production from hive to bottle to your table. Never heated, ultra-filtered, blended, flavored or infused. Gravity filtered to keep in all of the goodness the bees intended. Our honey is tested by independent labs to ensure it is 100% toxin-free to ensure no adulteration or agrotoxins (pesticides, herbicides, or antibiotics). Harvest Notes:
Expect a bold, mineral rich, wildflower beginning followed by a long, sweet middle from tulip poplar nectar. It finishes with a hint of caramel and anise so distinctive of the sourwood tree. A phenomenally low moisture level of 15.4% creates an intense, bountiful flavor with a velvety smooth texture. All this as a result of the bees blending tulip poplar and hundreds of other varietal spring nectars. This honey will stand up to any food pairing, or just as well all by itself.
